Ingredients
2- 15 oz. cans black beans precooked
2-15 oz. cans white beans precooked
8 cups vegetable broth
1 can beer
2-15 oz. cans red kidney beans
2 cups lima beans
2 cups onions chopped
2 cups green peppers chopped
1 bulb garlic peeled and chopped
4 tablespoons chili powder
3 tablespoons jalapenos minced
4 tablespoons fresh oregano
4 cups tomatoes chopped
3 tablespoons fresh cilantro or coriander + 3 tablespoons for garnishing individual portions.
2 tablespoons Sea salt and to taste
1 tablespoons Ground black pepper
2 tablespoon dark honey
4 tablespoons extra virgin olive oil
1 large ripe avocado pitted and sliced
Preparation
In a large boiling pot heat the oil to high then add the olive oil then add the onions, peppers, garlic, all beans, cilantro, oregano, sea salt, honey, black pepper and tomatoes and cook for 1 hour mixing every so often.
Remove from heat pour into large chili mug and sprinkle with cilantro and serve with the avocado slices on the side.
